Wasn’t this something that you negotiated? I try to encourage people to push back on people who are wanting to do the interview right away, so they have time to prepare and feel confident. If it’s already set, you agreed to it, then I guess there’s not a lot you can do now but Just general advice to all be a little more empowered in setting a date because it’s like they always want to do it right away to get it out of the way but *that’s not in your best interest* give yourself the time just state you’re on a business trip or unavailable.
I actually wanted to extend the interview deadline because one of the interviewers was unreachable. It doesn’t seem like I will be able to complete both interviews within the allotted time. Unfortunately I was only given 3 weeks and I did not negotiate. I’m also out of luck as my AO is away for 2 weeks.

I know this is a stressful situation, but I wouldn't worry. When an interviewer is not responsive or declines to do an interview, after notifying your AO, she pairs you with another interviewer and, if necessary, extends the interview deadline (which is not written in stone).
When AOs are away (e.g. on vacation), their emails are forwarded to other AOs. So, I would insist on contacting her and someone will reply soon.
In any case, this is nothing of your fault and you will not be penalized in any way.
