While reviewing the courses you must look at the following factors:
1. Will the course work for you? Look at the free trial resources of various courses out there and evaluate their teaching methodologies. Choose the one which suits your needs.
2. Is the course proven to deliver success to students like you? – Look at the reviews of courses out there and see what others have to say and then decide.

What all material is sufficient for preparation for GMAT without overdoing the material part.
It depends on the individual. Try some of the material suggested here and pick what you feel will work best for you.

It all depends on what your areas of improvement are. Mine was in Quant. I was pretty good in verbal and didn't have to do too much studying on it but my weakness was math. There are many resources that cover both verbal and quantatative but if you're looking for help in math Target Test prep really helped me. I found the lessons to be the most detailed and there are thousands of questions there. It might help you out, doesn't hurt to try, I recommend doing your due diligence when looking up materials to suit your needs but I can say that Target test prep helped me

Its completely depends on your goal score. What is your Goal Score?

For a score of 700+ you should go with a comprehensive material such as Manhattan Series

For Concept Learning

Manhattan Quant Guides
Manhattan Verbal Guides
For CR: The Powerscore GMAT Critical Reasoning Bible
For RC: Aristotle RC Grail

If you are seeking a sub-700 score normally in 600's You should better focus on Kaplan Premier Book.

But for Practice you should go only with Official Material Official guides and CATs.
