Book it once your mock scores are in line with your target scores.
I just gave my GMAT exam and got a miserable score of 465. I haven't scored this less in any of the mocks too. My mock score used to be above 555 with highest touching 595. I don't understand what happened. Scored 11 percentile in each of DI and verbal and 70 percentile in quant.

It can be the real exam pressure and maybe the questions you already knew how to approach felt difficult because of the same pressure. Similar thing happened with me in my first attempt.
