This is a comparison of the action of "eating" between two time-frames: lockdown and whole of last year. Hence, it should be a comparison of clauses and not nouns.
A) I have probably eaten more beans, pasta and rice during lockdown than I did in the whole of last year -- CORRECT for the aforementioned reason
B) I have probably eaten more beans, more pasta and rice during lockdown than I did in the whole of last year -- wrong parallelism
