Interesting background! Lower GPA will need to be counter balanced with strong GMAT - 675 will help.
Hopefully there is a way to discuss the career transitions as career progression.
The last year off will need to be explained a little more - are you hosting the retreats? or attending? Its best if it is seen as productive time toward professional goals.
What schools are you targeting? What are your goals?

Your background seems competitive for your schools - stats align. This year will be more competitive than before.

Good experience, show your leadership, 675 is good, but it will be more competitive this year as many are not seeking US schools, so 675+ will be necessary to stand out.

Yes - discuss these as entrepreneurship. I think that consulting is also generic - try to share more of your niche - even if that is within consulting. That is a broad range of schools - NYU, CBS could be a good option in the middle

additional languages would be good, but they are going to be most interested in GMAT and leadership. Work on networking with current students/alumni.
