I'm having trouble understanding the concept of adding 1, I got 1000/7 to get 142, than I knew 105 is dividble by 7, so 142 - 105 to get 127, but why would I need to include the one? Which multiple am I including that I am excluding from my 127?

Not sure what you’re doing there. There are 142 positive multiples of 7 less than 1,000: 7, 14, ..., 994. But why are you subtracting 105 from 142? Also, 142 – 105 = 37, not 127. The “+1” in the formula is there to make sure we count both endpoints correctly when finding how many multiples of a number lie in a given range.
