Here , I could not understand what the Subject is ?

We know that the subject cannot lie in the prepositional phrases . So ,

Most of the purported health benefits of tea
Is the subject Most ? and is most singular or plural ?

Whenever facing a confusion in some basic grammar structure, try out some simple sentences.

Most of my friends like apples.
Most of the cake is gone.

Some, All, Any, Much/Most are singular if used with a singular prepositional object and plural if used with a plural prepositional object.

Most of the health benefits... (plural)

Hi, just to be clear the subject is noun phrase most of the health benefits and not just benefits right because benefits is part of the prepositional phrase, therefore it can't be subject...

In this case, the plural word "benefits" is important, for the reason that KarishmaB explained well above:
