Thanks for posting. Overall it sounds like you have the basis of a solid b-school application profile. In addition to the quant skills etc, you've got some great leadership experiences you can cite (the leadership program itself; serving as the national director for the non-profit-- very interested/would love to know more; the mentoring experiences are great; leading a team of 25 (it's ok if it was more short-term vs permanent, still good experience). The leadership convention you conceived of and ran sounds impressive as well, and shows that you are determined, driven, and get things done.
As listed here, your goals could be flushed out further, to make sure you have a very clear and compelling case for WHY you want and NEED the MBA and exactly how you'll use it (but I also know this was a brief notes-style list of your profile, so understandable).
Sounds like your main tasks from here on out are working on your ESSAYS (lots of potential there, to show exactly who you are and what you'll contribute to a class, as well as why you need the degree and why their school), and school research. Be sure to show you KNOW each school well, and can vouch for why it's right for you. As for the GMAT a 710 doesn't bother me much as it's not likely to keep you OUT if the rest is stellar, but if you're set to re-take and feel you can make a difference that's fine.
