Profession is usually a noun and professional is usually an adjective, so you would use a noun when you need a noun. Sometimes professional is a noun but it has a slightly different meaning. You would likely use profession in your example though it will depend on context.

But i found a sentence saying: "An increasing number of professionals, such as doctors and teachers, are leaving their own poorer countries". Here they use "professional", not profession.

That sentence talks about people, not professions.
