Hi Mike,
I have worked and consulted with quite a lot of admission consultants and seen many profiles so I would judge you on that.
1. You have a profile that will not eliminate you from consideration at your target schools but 70-80% of the applicants at the schools you have mentioned will have a better or similar profile in terms of GMAT for sure and possibly the other stats too. I would strongly recommend you to retake it to be in an even better position and get it to 720+. For your pool, that should suffice but to reiterate, this current score will not be what puts you out of the race if your other stats are really above average(ex. your career graph, your responsibilities, any interesting projects that you lead at work, the start-up etc.)
2. Your extra curricular activities are decent. What stands out is the start up that you mentioned. For your target schools, if you have actually achieved decent statistics in that regard and you present it correctly, it can be a gold mine. You would have to present it in such a way that what you have achieved showcases all the qualities that you think make up your "personal brand".
3. Deloitte is a big brand name which works but I will again say that most people applying to these schools will have similar backgrounds. You would have to find out the best of your 4 years and make it even better aligned with your applications. The key point that you mentioned for example is your other USP apart from the start up. You will have to exploit such pointers to make your profile shine at your current score.
I hope this helps. You can message me if you need any more inputs.
Kudos will be a good way to thank me if you find this useful.
