You definitely have a very interesting profile! And your foray into entrpreneurship adds to that.
But I hope you won't mind me starting with a couple of somber truths.
First, an unsual profile never made anyone an excellent fit for any school.
Second, no GMAT score ever, not even a 99th percentile, gives a candidate a leg up. Test scores are table stakes when it comes to the very top programs. From there, the thing that matters most (pun intended) is your story - where have you been, where are you going, how the MBA will serve as a bridge.
I actually worked with someone with a similar profile in this last cycle. Not a musician, a different kind of performing art, also with a bit of notoriety in Europe and very interesting projects. That candiate was a few years earlier in their career - early 30s. Very competitive GMAT and GPA and an excellent writer so their essays were fantastic. That candidate did get admitted to Stern but not Haas and did not receive an interview invite from the GSB. MBA admission is a very competitive game. The AdCom could love you and still say no to you. They did get into UCLA and USC as well.
If you are serious about applying, the first thing you need to do is start engaging with the schools - attending admissions events and speaking with students or recent alums. You will need to understand how the MBA admissions process works, what programs might be a good fit for you, and how you might be a good fit for them.
Also, IMO, a GMAT waiver for an M7 school in your case will likely make a serious dent in your competitive standing.
