Hi there,
First of all--congrats on everything you've accomplished to date. It sounds like you've been really active at work and outside of work!
Digging right in to your profile, I do think you're thinking about the target schools in the right way. For better or for worse, one the best indicators of success in the admissions process is your GMAT score. (And it's even more challenging for folks from over-represented backgrounds.) Right now you're a bit all over the map, though, so I'd encourage you to really think about the geography you want to build the most connections in and start there. E.g., if you're excited about the prospect of working in Europe I think Cambridge, Imperial, maybe IESE would all be great choices. I see Stern and Tepper on the list, so if you're more interested in the US you could also look at Emory, Georgetown, etc.
Your work experience at Accenture sounds really interesting, and I'm sure you could bring a lot to classroom discussions. However, I don't entirely know what a product owner does in this context, so you'll want to make sure you really demonstrate the impact you have--whether it's making product decisions, directly or indirectly managing others, managing a budget, etc. Your nonprofit experience can also help demonstrate your leadership skills and will show that you'll be an active member of any business school community.
What's missing for me now is why are you pursuing an MBA? You're pretty well-rounded, with a number of diverse experiences both professionally and personally, so you probably have a number of options. It's important to demonstrate that you're clear on why you need an MBA and why you need an MBA now--what are your short-term goals and why can you only get there with this degree? Answer this, think about your long-term goals, and you'll be ready to start putting together your overall story.
