For the NUS essays, do we have to strictly follow the 350 words and 250 words limit because I have just observed that for the first 250 word essay the site has allowed me to a write a 350 word essay without showing any error.

Yes, you need to follow it, however not so strictly. You can exceed it by a few words(~5). I don't think you should stretch beyond that. Try to keep it below 250 though.
