Education: 3.16/4.00 from a U.S. school ranked 30-40s. School certainly has a solid reputation but is not an elite Ivy. Bachelors in Philosophy with a second major in French and a minor in Business. I was not the most focused student but my GPA in my major was closer to a 3.7 and I speak to my academic shortcomings and journey in certain application essays.
GMAT: 680
Work experience: 5 years of work experience -- most recently, 1.5 years working abroad in French in both French/English speaking capacities at a boutique brand consultancy, and the last 2-years working at a very successful PE-backed startup, working in a financial capacity where I fundraise, build financial models, oversee due diligence and data room processes, and head acquisition/investment leads.
To elaborate, I have had significant international experience in my childhood, as a college student, and professionally
Extra-curriculars: I was heavily involved in EC activities in college -- helping to found a club basketball team and carving out a good chunk of time to community services in the form of tutoring and education. Now, I work on "side-hustles" as key EC activities, mainly an online Amazon FBA shop that has seen some success, and growing a YouTube channel, as well as picking up a 3rd language.
Post-MBA goals: Leverage the credibility and education from my MBA in conjunction with my expertise working in startups to pivot into a more integral role in the PE/VC scene.
Desired schools: LBS, Oxford, Cambridge, LSE (MiM), Imperial, INSEAD, HEC, Columbia (legacy), UCL (MiM)
Other info: I have a somewhat mixed background as my mother is middle-eastern and my father has European roots. Obviously my GPA/GMAT are not as strong as others on here, but I am trying to remain positive that I have a unique profile and value to offer. I will have very strong LORs from both a Co-Founder/Managing Partner and a CFO/COO.
GMAT: 680

While I do think your background is very interesting (and I would like to explore it in more detail), I am concerned about the GMAT score at some of these schools. The MiM programs at UCL and LSE are probably manageable, though they tend to go for younger students with far less experience. INSEAD, LBS and Columbia feel like stretches. Oxford, Cambridge and HEC are probably in range, but are anything far from a guarantee. Imperial is probably the only school that's comfortable with a 680.
Is your GMAT score more heavily skewed towards the V or Q side? That would be interesting to know given your background in finance functions.
Would you consider retaking the exam? Are there other schools in the US that would interest you or are you keen in going to the UK?

Thank you very much for your reply, I agree with your analysis.
My GMAT breakdown is unfortunately not skewed favorably to Quant -- its 40Q/42V with 7 IR and a 6 AWA.
I have consistently scored between 700-760 on mocks and will be retaking the test soon. However with deadlines I am not sure whether I will have time to utilize the new score (should it improve).
For personal reasons I am only interested in relocating to England and to a lesser degree France... Columbia was thrown into the mix as I am from NYC and I feel there are significant legacy implications (family member is also an adjunct professor there).
My hope with INSEAD is that my French ties may help ease some of the weaker components of my app, and LBS is the only school I can say I've made a concentrated effort to meet and befriend admissions (through meetings; 1:1s) ahead of the application process.
I agree my odds are not strong individually but my thought is that across these options perhaps 1 or 2 will pan out -- I suppose I am looking for validation or at least an opinion there.
