(B) She was an educator, a builder of institutions and organizations, and a major figure in the Black church and secular feminist movements, and Nannie Helen Burroughs also was one of the best-known and well-respected African Americans of the early twentieth century. -Non-sense meaning - NHB was well known and well respected for reasons that had nothing to do with the stuff mentioned earlier in the sentence.
in fact, choice B is quite emphatic about this non-relationship. (the use of 'and' already implies 'separate observations', so that's good enough to rule B out already... but then there's 'also', which puts even more emphasis on the notion of 'ok guys, we're talking about a DIFFERENT IDEA now'!)
(C) As an educator, a builder of institutions and organizations, and a major figure in the Black church and secular feminist movements, Nannie Helen Burroughs was one of the best-known and most well-respected African Americans of the early twentieth century.- Correct

I would just like to add here that there is no run-on issue with Choice A a you identified.

There are two independent clauses that are joined by comma + so. So is one of FANBOYS. And all the comma + FANBOYS join two independent clauses.

Yes, your reason to eliminate Choice a is correct. Usage of as well does lead to redundancy with the usage of and in this choice.

Your analysis is almost correct. I say almost because following are the lists in the correct answer choice C:

As
    an educator,
    a builder of institutions and organizations (embedded list), and
    a major figure in the Black church and secular feminist movements (another embedded list)


So this list features all the roles.functions of Nannie Helen Burroughs.


Now the next list is as follows: Nannie Helen Burroughs was
    one of the best-known and
    most well-respected African Americans

of the early twentieth century.


So this list comprises two adjectives for Nannie Helen Burroughs.

Eventhough, there was an issue with "as well" with original sentence, I went with "A" because I thought that usage of "so" gives the meaning that " because of her role as an educator and black feminist etc" she was a well respected african american. such meaning is not conveyed by any other sentences. Did I over analyzed or something ?

It could be so, but only if first part would be an independent clause. Look once again, in the first part you have a fragment (no verb).

Correct: I was there, so I was able to help her.
Incorrect: Car, truck, and train, so I can drive all of them

something is a +noun
a+noun is something

the first is correct. the second is incorrect because a+noun means any +noun is somthing definite

he is a good student
a good student is he. this is normally wrong. this is correct in a special case.
