I believe that the 2 options left are C and E.
While I believe that "how it may be adapting and evolving to its human hosts" is not attractive, we can be more decisive when using "and"/"and also" split.
The REDUNDANCY rule is very simple: If a word can be removed without affecting the meaning of the sentence, the word is redundant. Hence, E is the correct answer.
Back to "it may be adapting and evolving to its human hosts", we can see that the option completely reflects the intended meaning of the author (original sentence).
While I believe that "how it may be adapting and evolving to its human hosts" is not attractive, we can be more decisive when using "and"/"and also" split.

I believe such questions must be outside the GMAT Syllabus. I might be wrong.
