Congrats on a great score! The answer to your question depends in part on where you are applying and when. A 680 is very competitive for schools outside of the top 10, and workable for top 10 with other strengths. That is probably a preferable split for a 680, given that Q is more important than V.
If you are looking to maximize your chances at a top school, and you have the time, you should try boosting the verbal. Remember schools use the GMAT to tell them that you are smart enough to do the work, and your score is high enough to say that. That leaves you just competing on score to get ahead of your competition. If you have a really strong story or unique background, you can get into schools just the same with a 680 as you would a 720. However if your background is more common you can benefit by distinguishing yourself from similar applicants with a higher score.
Also, well written essays are essential in any case, so make sure you have time for that before trying to retake.
