I scored a 560 in last MGmat mock test. I have two months to study. Is it possible to increase my score by 200 in two months? I have 2 hrs to study on weekdays and 5-6 hrs on weekends

It is certainly possible, however it will take some blood, sweat and tears (metaphoricly :) )

If you can provide your Q/V split it would be easier to give some more tailored recommandations ;)

Hi
A score of 560 on the Mgmat mock test is good. The Mgmat tests are normally higher level than the Gmat, so it would be better if you could appear for a Gmatprep test after 1 month of preparation to know where you stand. Follow a study plan. You can follow the Gmatclub self study plan. It is useful. You can study from the Mgmat guides for theory and practice from the OG. Hope it helps.
