I haven't studied anything and have only written the one test: 47Q 40V 8IR
How accurate is the IR bit? Is that for the essay I wrote at the start? I think I could have done a bit better on the V as I started getting tired and hungry towards the end. Trig stuff in Q kicked my ass.
How many hours should I study to get a 750+ on the actual exam? Do you think I can write it in August studying at a moderate pace (8-10hrs / week)?

The IR score is for the section at the beginning with graphs, spreadsheet, and tabbed info. 8 is the highest score you can get, so congrats! Your essay would get a score between 0 and 6, but isn't scored on the practice tests. Feel free to post it online and PM me if you'd like a score.
As for the 710, that's a pretty elite score, so it's a good start! At that level of skill, it can be hard to keep improving--but at 10 hours of week, you will definitely see progress. Unfortunately, it's hard to make any promises about how much you will improve. The best bet is to keep taking practice tests and seeing where you are as you keep going.
Finally, I'm a little surprised to hear you say that Trig stuff gave you trouble. By and large, trig isn't tested on the GMAT at all. The Testmaker will expect you to use the pythagorean theorem, but I've never seen a GMAT problem with Sines or anything like that. They'd be very hard to do without a calculator, after all.
