First of all thank you for valuable inputs on the countless posts. Its amazing that how much one can learn from just reading your old posts.
Here we go:
GMAT1: 620(Q:48 and V: 28)
GMAT2: 700(Q:48 and V: 28)
Education:
Undergrad GPA : 7.2/10 ( Computer Science from India)
M.S (computer Science) (top 50-60 school USA) GPA : 4.0/4.0, member of Tau Beta Pie Honor society
Work Ex (all in US)
Software Engg in a Startup - 1 Year
Engineer @ Top Health Care Research Firm - 3 years
Recommendations:
1 from my manager for last 1 year
1 from another manager of a product with whom I have worked closely.
I want to focus on Entrepreneurship and product management, short term goal immediately post MBA is to work in a startup firm as product or project manager and fine tune my skills in regards to both. (product/project management). My long term goal is to start my company in data analysis.
Outside Work
-For past three months outside work I have been working with a charter school as project manager, leading a team of 5
people from my company in streamlining schools operations.
-I am also running a small astrology business (thru website) with my parents on the side, my mom is a research scholar in Astrology. The reason for this was two fold one to revive the dying science of astrology and second to generate funds and data for her research. I developed website, marketing strategy and data analysis strategy for her business.
-I am also planning to join a dog rescue group, this is solely due to personal experience of having a dog.

Questions:
Do you think I have shot at these schools?
Do I need to add any more schools or take some schools off from the list?
What schools should I pick as safety schools?

No need to apologize... Yours was a very easy to follow post!
First, as you know, you're going to be in the "Indian/Engineer" penalty box. Nothing you can do about that fact, but it does mean that you'll just need to work a little harder to stand out from the pack.
About your GMAT, I'm a little confused about your two scores... You got the same Q and V scores each time, but had an 80-point improvement in your overall score? Maybe that was a typo? Either way, if your best score on the Verbal side was 28, I do think you should take the test again. Ideally both your V and Q percentile scores will be at or above the 80th percentile. That's just a rule of thumb that we use at Veritas Prep, but it gives you an idea of where you want to be.
Beyond that, I think you have the beginnings of a competitive profile. If you have strong career progression on your job and can point to specific leadership experiences, that will help a lot. I really like your experience with the charter school -- hopefully this will blossom into something you can really "dig into" in your essays.
The astrology web site is interesting, but I would present it just as a hobby. Honestly, it seems like a bit of a distraction from your overall story. I'm not saying you shouldn't talk about it, but you should talk about it as a hobby more than as a sign of your entrepreneurial bent... The latter approach makes you sound a little bit like a dilettante, IMO.
The real key will be your GMAT and having enough interesting/impressive things to talk about in your work experience. If you can nail both of those, I think you will have a shot at these schools.

My second verbal score is 38 and you are right thats a typo.
