First, I would say that the EC issue is only what you make it. In other words, if you can find places from your life - community, work, personal life - from which to mine meaningful stories of leadership, teamwork, maturity, and the like, you will be fine. Schools don't put a ton of stock in laundry lists of activities for two reasons: super hard to normalize across cultures and even harder to validate. It's far more important that you can point to accomplishments, mistakes, and other key moments and show the key themes on display.
Second, with the strong professional progress and (it sounds like) success stories, coupled with a GPA that is both in line with most programs' averages and from a top program, as well as a sturdy GMAT score, I think you should be competitive at most programs.
However, I do have recommendations regarding schools. Namely, three to add.
The first is Yale SOM. Not known as a consulting school by any means, but very strong in healthcare.
The second is Tuck, where the entire university is shifting to a healthcare focus due to their new president.
The third is Duke; strong in consulting and situated in the research triangle, making healthcare angles easier to take in the job market.
The big thing for you will be extracting the right stories to hit the right themes and then contextualizing all of that with the proper schools.
