Hi Alex,
Thanks for giving your recommendations and advice on mba programs.
2 main questions:
1) I was considering applying to 1 or 2 schools(reach:Stanford) in R3 this spring for Fall of 2011. Which round and schools would you recommend?
2) What makes more sense in terms of a short-term and long-term essay? The brand mgmt or Entrepreneurship route?

Work Experience:
2008-current restaurant manager at restaurant my family started and own.
Created and implemented new beverage and dessert menu, increasing beverage sales by 10%, after taking a course in beverage handling and sales.
Manage, train, and recruit up to 10 employees.
2007-2008 Technical Recruiter - contracting compan
International exposure:
Study abroad in China for 2 semesters during undergrad - language program
2nd language - Mandarin (conversational)
Extra curricular/Leadership:
Current - volunteer with high school seniors - college application workshops
Service projects with food shelters 1-2 years
Started and managed a local street fair booth as an extension of my family restaurant prior to working full-time at the restaurant
Target goals post-MBA:

To be honest, you may want to re-evaluate your school choices. I'm talking local schools like UCI, Pepperdine, and so forth.
Keep in mind that you need more corporate ("office job") experience, otherwise your chances are going to be slim. I'm sure managing a restaurant can be crazy stressful and hard - and something that 99% of MBA types won't have the ability to do, but the adcoms are looking for people who coming out of school can also be attractive to recruiters.
And to be honest, even if you're going into the food industry post-MBA in a corporate position, the recruiters are still going to be wary of hiring you because they will wonder whether you can translate your prior experience "in the kitchen" (figuratively and literally) into a more staid office environment. Yes, you may have worked in an unrelated job as a technical recruiter in the past, but a recruiter may discount that (especially since it was only a year, and most of your career to date has been at a restaurant, and in a family business no less, which will then give recruiters more cause for concern as to whether you can work in a more formal environment).
What could also work for you perhaps is looking at part-time programs.
