You'd need to work your post UG job into the essays somehow--shouldn't be an issue where, but i agree that it should be in there. Applying to b-school is like being a business person--lots of ways to skin the proverbial cat and your mission is to get to them the information that is most relevant to a positive decision, whether they specifically ask you for it or not. your background shouldn't be too cookie-cutter as you say, particularly since you will be cast as a "poet" vs. a quant at least in education, yet your GMAT shows quantitiative potential as well. I think it's a unique combo that might just attract some attention.
