Hey Roman - your work experience counts for a lot! Yes, big companies on a resume can serve as wonderful proxies but it seems your work is really interesting. It is wide ranging, touches every function, and has a solid impact. It's up to you to make sure that comes across in your application because it won't be readily apparent. But I think you can do that. If a big corporation isn't your cup o' tea, then don't sip it.

I get you're concerned about the time to take the GMAT, work on apps, etc., but if this is your dream, I say go for it. If you put your absolute best foot forward and still don't get in (which I find difficult to imagine at at least one top 15), then you tried. Why talk yourself out of it before you even try?

Changing your jobs dramatically before you apply isn't advised. So if you're applying NEXT year, go for it. This year? Eh...only if you feel it's the right choice for YOU (not the adcom).
