Yes taking coursework in quant areas is beneficial on two fronts: 1) it demonstrates to adcoms that you have more quant ability than is evident in your core profile and 2) it will help you prepare for the onslaught of rigorous quantitative coursework in the MBA program.

Quick update!

I did wind up taking the GMAT again and scored a 650 (44Q / 36V), which I'm pretty pleased with. Additionally since posting, I enrolled in a financial math class at my local university so hopefully this will help further demonstrate my quant ability. Now to finish those essays! Thanks again for the input.

Now you are much more "in the ballpark" so you should set your sights high--especially since part time programs are more forgiving of GMAT scores and as a female, you don't need to score quite as high since your perspective is underrepresented in b-schools and valuable. With a 650 and additional quant coursework, you will likely get some attention at your target PT programs. Let us know if we can help you prepare applications.
