Thanks for sharing your background! I'll echo the congratulations on the GMAT - nice work! Given that R1 deadlines are coming up quickly, unless you've started already, R2 might be a better option if you don't think you'll have the necessary time to put together a quality application. You could maybe do one school but only if you've made some good progress to date or if you have a lot of time over the next 2-3 weeks to dedicate to it.
Your community involvement is a bit light, so be sure to highlight your leadership experiences and impact you had in your firm as well as any pro-bono or volunteer activities you may have been a part of. Finally, it will be critical to hone in on your goals. Management consulting is a great short-term goal, but take some time to think about the type of work you'll want to do, what industry interests you most, and what you hope to get out of that experience. Finally, be careful about entrepreneurship as a long-term goal. First, this is a very common goal that AdComms see these days, so it's important to be specific and provide evidence or proof points that give the AdComm some confidence that you will indeed be successful in your venture.
With all that said, HBS and Stanford are your stretch schools, but assuming you're open to applying to several (~5+) schools, you could give one or both a shot. Booth, Berkley, Tuck, and Kellogg are stretches as well, but more aligned than H/S. Finally, I like Darden as an aligned school for you and given your goals, I think Fuqua is a great option as well.
