Here is my take on your queries:
1. Is it ok to use contractions in essays, such as I'm, you're. I am having difficulty in conforming to word limit put by schools.
I recommend using full words ( I am , you are ) instead of contractions ( I'm, you're) in formal English.
2. Is it ok to cross the limit a little bit? For example, is it ok to write 600 words with an essay 500 words. We all know that at least 100 words are used for articles and other helping words, so maybe I thought adcom would understand us. Moreover, I also wonder whether they really count every essay before checking or they do it only when they see something seems too long. I will be able to keep them only on one page.
Personally,I am a sticker of rules and guidelines , so if the word limit of an essay is 500 words, I would not finalize that essay at 501 words (unless the applicant is fine with it ) Also, some schools specify" maximum 500 words or less", which implies they are not expecting you to write even one extra word.
Adhering to stringent word limit specifications is indeed extremely challenging and time consuming , but not impossible.
