I know you're asking about the resume but I would certainly consider leveraging this experience for an essay of course topic willing. But this could be a great anecdote and really be far more interesting then the typical "run of the mill" MBA essay. Also, keep your resume to 1pg if possible, there really is no reason at this point in your career and for the application process to have anything longer. Trust me the AdComm will thank you for this!

Thanks for the feedback. I was listening to the presentation from HBS regarding admissions and I heard that the resume should be 1 page unless you come from a science background. I was thinking of making a 1 page resume but listing my patents and publications on a 2nd page, which would only be about a third of a page. When listing publications, you can't really shorten them because you need to list the citation. I feel like this approach is a compromise between the two. Does this sound reasonable? I noticed the MIT site also says that the resume should be 1 page but it doesn't say it must be 1 page.

I'm only planning on applying at HEC Montreal and MIT (despite only a reasonable quant score (67th)) and for MIT I was thinking for the "alternate media" option, I could link to a university newspaper story about the demise of the varsity team I was coaching. I couldn't really think of a way to put this extracurricular a activity into one of the essays without it feeling forced to fit the topic.

Dear Admission Consultants,

I'd like your recommendation on how to provide details of my extracurricular activities as part of my MBA applications. As a graduate student I was the Head Coach of one of the varsity athletic teams and was responsible for all aspects of running the team including coaching and administration. Furthermore, I used part of my coaching grant to fund the team's activities over these years. Subsequent to that experience, I've been a volunteer coach at a martial arts school for 2 years. However, although I am not paid, I do receive the benefit of a free membership. Unless I use this experience as one of the essay topics, I'm guessing my only option is to include the details in my resume? However, I'm already worried about having to submit a 1 page resume considering that I'm coming from a science background and would like to list my publications.

It's apparent that I'm asking a question I already know the answer to simply due to a lack of other options, but do you have any suggestions if indeed my only option is to include these details in my resume?

I'm only planning on applying at 2 schools, one in Canada which I have a good chance of getting into due to my 710 on the GMAT (620 avg. at that school) and the other being MIT, for the hell of it. The Canadian school does not specify a 1 page resume so I will make a 2 page resume but MIT requires a 1 page resume. I also considered Harvard but I feel like 2 long-shot applications is asking too much from those writing my recommendations (both doctors and professors) and Harvard seems a bit too much of a stretch considering my mediocre GPA (3.5/4.0) and my experience doing research in a hospital setting which is not a high profile position.

Well, there's always one way or another to get the best and more important on one page. :)

But overall, listing your publications for an MBA is really not necessary (not unless it's relevant to your goals). And its far far more important to get out your ECs, sooooo my preference for using the space would go to the ECs.
