2 very different GMAT scores due to test conditions, how will B Schools interpret this, or will they even bother?

meshackbThe good news is I've just joined the forum and looking forward to being an active member bringing an admissions committee perspective as I've been on the other side of the table for 15 yrs! The bad news is just that I am catching up so I'm sorry to have not gotten to your question until just now.
As far as your question... well yes, I would say this is an interesting mix. What it means is that you are capable of getting that 42 V and 39 Q and you just need to put those together on a test. Schools are only looking at the official scores- not practice tests. But if I saw those tests on an official score report for a candidate I would be reassured that the potential to score higher was there. I saw a good GPA on your profile so that will help in being considered overall and also demonstrating in your application that you can handle the quant rigor of b school- by getting recommenders to address quant work product and also by potentially adding some quant classes if needed. 2nd GMAT...
640, 35(Q), 42(V)
I'm including the first diagnostic test I took so you can see more of what's happening with the test scores, I've had my Verbal and Quant scores basically swap places. My very first practice test, I had a verbal of 42. Then the first GMAT about 6 months later and you can see it dropped to 34, then the 2nd gmat about 4 months later and back up to 42. My quant on the first practice test started under 30. Then jumped to 39, then back down to 35.
I would have expected to see more linear progress, but this seems all over the place. Anyway, my question is, will B-Schools take any notice of this or do they simply take the highest score? That would be my 640, with a 35(Q), and I have heard that regardless of GMAT score, if your quant isn't at a certain level, schools may question if you can handle the rigour of the course load.
