I do agree that this is a big risk, for most freelancers it turns out to be a bad decision, MBA application-wise.

The reason is that it’s hard for the schools to compare freelancers and their achievements with each other, so I would only do it if I felt I would be likely to have impressive achievements that I could reference in my essays. I am not sure what that would be as a software developer but let’s say that you got to lead a big project or a team as a freelancer, then it could be worth a shot.

But again, for most people it’s not what I would recommend.
