Hey crate. Keep your current slot. In my opinion it will definitely seem like a smart move. Additionally, you can capitalize on knowing two of them and here are my suggestions of how you can do it.

1. Assuming you made a good impression on the adcom member you met, best case is you crash the interview, then you have two of them backing you up. Middle case is you are average on the interview but there is another good opinion data point of you to help the decision making by the office.

2. Extra tips, on your interview, tell the other you met the other one and if you remember the conversation you had, definitely bits of it as part of your interview. It cements familiarity and your interest in the school. Secondly send notes to both of them after the interview, one to thank for the interview and the other to inform you had the interview, enjoyed it and you are excited to hear back. Don't forget to tell them why their school in there. These actions will help consolidate the support of your profile in the admissions office.

Hi,
hi @crate, here are my suggestions below as someone who used to interview MBA applicants for UNC Kenan-Flagler
I have an interview coming up with a school next to next week. I myself chose the slot with an adcom but as I've been attending all events of the school, I recently met an adcom at one of the events and told her that I've been invited for interview with the School. I saw that there is an interview slot available with her and the School does give an option to cancel a slot and book another one. Both of the interviewers are senior members of adcom. What should I do? Is it a good idea to reschedule my interview with the adcom person I recently met at the event?
I want to know if it can help start interview on a warm note and help me in getting an admit from the school.
The admissions team is so busy with their work that it is doubtful they would notice if you rescheduled the interview-- but at the same time I agree with other advice that has been given. You can mention that you had a great conversation with X (other admissions person you met) and that will be seen as a positive sign that you are interacting with the school.
The danger in switching spots is if for some reason you lose a spot and then can't get the one you want that could slow your interview process down. I would not focus so much on WHO is interviewing you-- but that you have solid reasons for attending this school and that you know YOUR story well! The interviewers all have the same training and will be looking for similar things so a strong interview will be rated as strong no matter who is interviewing you. While it can be true that some interviewers on a staff are known to be a little more or less generous on their ratings, these things have a way of being calibrated on the school side so I really would not worry about things out of your control-- WHO the interviewer is. As long as you do a great job on your interview, that's what matters most. Here are some remote interview tips that will help you! Best wishes!

I understand your point. Yes, I think it wouldn't have mattered matter even if I would have changed the slot. Because it was all according to my performance which I am afraid did not go that well. :(
So, it is at the end me only. :P anyways thank you for the advice though :)
