I think you're applying to a good range of schools and you have a good sense for where you stand.

Only thing I would take out are the Asian schools like HKUST and CUHK/CEIBS -- there's nothing wrong with these schools, but given your profile I don't think you'll get a whole lot out of these programs. Keep in mind that the highest caliber Asian professionals over the past 20+ years tend to go to the top US/European schools, or they don't go at all. In terms of network and peers, you're better off going to a US/Euro school where there's going to be tons of Asians anyway. Also, I think you have a reasonable enough chance at the other schools (Columbia, Tuck, Duke, Ross) that you don't need to apply to the Asian schools. Maybe add in one of UCLA, NYU or Cornell - I'd probably apply to UCLA if you're looking towards Asia (UCLA here in Los Angeles is known as the University of Caucasians Lost amongst Asians).

INSEAD would also be a good fit for you given that you have loads of international experience (which by the way should be what you can really focus on in all your applications). I'd look at Round 1 for INSEAD.

I will revise the school selections and your UCLA comment is really humorous.

Just in case things went wrong, can you suggest some safeties to look at given my background and goal? (Would USC be in there?) And also would you still rate those safety schools above the Asian schools I mentioned?

Schools like USC and Texas would still be better than the Asian schools.
