Correct Option B

Original sentence:
Unlike birds,
- which are highly sensitive to atmospheric pressure,
- people have found that paragliding require the use of a variometer since detecting thermal currents are impossible using normal human motion sensitivity.

Sentence meaning:
In contrast similarity of flying, comparison with birds, which are highly sensitive to atmosphere pressure, and can detect thermal currents during their fly, people on other side are unable to measure thermal currents, who are doing paragliding, by normal human motion sensor, to measuring this thermal currents varimotors device is used.
[the use of a variometer crucial for paragliding]

Based on only meaning, A, C, D and E are eliminated,
because the phrase in sentence refer with usage of "That" as that paragliding require the use of a variometer, which is wrong,
here "paragliding" works as a Noun/Subject,
we need paragliding as a verb and instrument varimotors device as Noun to have intended meaning of the sentence.

Remaining with B and only correct.
(Pronoun It refer to "pressure")

(A) that paragliding require the use of a variometer since detecting thermal currents are impossible using normal human motion sensitivity

(B) the use of a variometer crucial for paragliding since it is impossible to detect thermal currents using normal human motion sensitivity

(C) that paragliding requires the use of a variometer since detecting thermal currents are impossible using normal human motion sensitivity

(D) paragliding to require the use of a variometer due to the fact that detecting thermal currents is not possible with the use of normal human motion sensitivity

(E) that paragliding requires the use of a variometer since detected thermal currents are impossible to handle using normal human motion sensitivity

In my opinion the answer should be C.
As per subject verb agreement the verb should take singular form, thus there should be requires after paragliding. This eliminates option A,B and D, left with the option C and E. E changes the meaning of the sentence, thus C should be the answer.

Sentence Structure
Unlike birds,
--------which are highly sensitive to atmospheric pressure,
people have found
--------that paragliding
-----------------require the use of a variometer
-----------since detecting thermal currents
----------------are impossible using normal human motion sensitivity.

Error Analysis:
1. Paragliding is singular - (require -> requires) Subject Verb Agreement(SVA) error
2. Detecting is singular - ( are ->is) - SVA error

POE

(A) that paragliding require the use of a variometer since detecting thermal currents are impossible using normal human motion sensitivity
- Error as highlighted above

(B) the use of a variometer crucial for paragliding since it is impossible to detect thermal currents using normal human motion sensitivity
- Sentence structure has been changed
- Not able to find any concrete error in this option - so lets look for errors in other option
- here "it" is acting as placeholder pronoun

(C) that paragliding requires the use of a variometer since detecting thermal currents are impossible using normal human motion sensitivity
- paragliding requires - corrects SVA error
- detecting thermal currents are - 2nd SVA error is still there

(D) paragliding to require the use of a variometer due to the fact that detecting thermal currents is not possible with the use of normal human motion sensitivity
- to require - is showing the intent - which is not the intended meaning
- use of due to provide the reason for "paragliding to require the use of a variomete" is incorrect

(E) that paragliding requires the use of a variometer since detected thermal currents are impossible to handle using normal human motion sensitivity
- detected thermal currents are - SVA Error

B is not ideal but other options contain blatant error
Correct B

(A) that paragliding require the use of a variometer since detecting thermal currents are impossible using normal human motion sensitivity

[/color]

(B) the use of a variometer crucial for paragliding since it is impossible to detect thermal currents using normal human motion sensitivity
"the use of a variometer crucial" as a modifier gives additional information on what people have found, and the usage is perfectly fine here.
'It' can be used as a subject when there is no identifiable actor. For example, "It is a fact that sun rises in the east", "It is still unknown who stole the umbrella".
(C) that paragliding requires the use of a variometer since detecting thermal currents are impossible using normal human motion sensitivity
Subject verb agreement errors at 'are impossible', as the subject 'detecting thermal currents' is singular. Eliminate

(D) paragliding to require the use of a variometer due to the fact that detecting thermal currents is not possible with the use of normal human motion sensitivity
Usage of verb, 'to require' is awkward here as there is already the main clause (people have found) followed by another subordinate clause 'paragliding to require the use of a variometer'. It would be cleaner if the compound conjunction, 'that' was used between the 2 clauses. Eliminate

(E) that paragliding requires the use of a variometer since detected thermal currents are impossible to handle using normal human motion sensitivity
Subject verb agreement errors at 'are impossible', as the subject 'detected thermal currents' is singular. Eliminate

Unlike birds, which are highly sensitive to atmospheric pressure, people have found that paragliding require the use of a variometer since detecting thermal currents are impossible using normal human motion sensitivity.

(A) that paragliding require the use of a variometer since detecting thermal currents are impossible using normal human motion sensitivity -> SVA error. We need "requires". Incorrect.

(B) the use of a variometer crucial for paragliding since it is impossible to detect thermal currents using normal human motion sensitivity -> "it" is used as placeholder. SVA errors are corrected and it is better. Let's keep it.

(C) that paragliding requires the use of a variometer since detecting thermal currents are impossible using normal human motion sensitivity -> detecting something "is" .... is correct. SVA error. Incorrect.

(D) paragliding to require the use of a variometer due to the fact that detecting thermal currents is not possible with the use of normal human motion sensitivity -> "paragliding to require...." is incorrect. "Due to the fact" is another glaring error. Incorrect.

(E) that paragliding requires the use of a variometer since detected thermal currents are impossible to handle using normal human motion sensitivity -> same error as C. Incorrect.

So, I think B. :)
