Howdy, Austin! Great question, and you're in the right mindset in thinking about demonstrating your quant proficiency via a course. From your list, I think that Principles of Accounting and Microeconomics would be the best to start with. Mathematics for Management would be quite useful in prepping you for the MBA program (but you're right that it's important to get an A!).

However, after taking it 3 times and getting the exact same score on the quant section with 200+ hours of study, I’m ready to move on to showcasing my quant skills in other areas of the application. With a Communications degree and only one quant course in college (I took statistics and got a B+), I’ve heard it is best to take 1-2 quantitative courses at a community college to demonstrate your math prowess. However, I’m a bit confused on what courses the ADCOMs would prefer to see.
I would most likely be taking them at UCLA Extension as I already have to submit a transcript from there. Here are the courses I’ve identified that might be good options:
1. MGMT X 1A – Principles of Accounting – Part 1
2. ECON XL 1 – Principles of Economics: Microeconomics
3. MGMT X 100 – Business Economics (basically Managerial Economics)
4. MGMT X 110 – Mathematics for Management - Might not get an A
5. MGMT X 410 – Business Applications of Calculus – Note: Terrified of Calculus, having only ever took Pre-Cal in high school.
