EC’s and the MBA Application ---- They help the school see what is important to you (subject/focus) and how you will likely get involved in their program --- also gives you a connection to discuss joining a specific club/activity.
Should you start a brand new one right now? Not exactly -
I suggest making sure it connects with what you’ve done previously or are passionate about or an expert at ---- coaching badminton, tutoring, debate = toastmasters, or get involved in service with your current company

Good profile - adcoms understand civil service is hard to crack in India. Without GMAT, here is my feedback on school list -
INSEAD will be looking for pre-MBA international experience - think of any vendors/clients/ teams that have had an international component or worked with someone from a different culture.
Rotamn - even though you have 7 years of experience, they tend to keep a younger cohort - so may be tough to crack
For both of these schools, I recommend trying to get a
profile review or have a conversation with someone from the admissions team in one of their chats/online MBA fairs
Other schools seem well aligned.

+1, would engaging in more ECs starting now look like that it was done only for applications given the timelines?
This is why I recommend doing something that is related to or continuous of what you’ve already done. AMEX typically has many community involvement opps, use these to boost your ECs. Or maybe try to ’advise’ the debate team from your school or a local school... or join/lead toastmasters
