fatty cheeses. Walk into the Heart’s Delight, a store that started selling organic fruits and vegetables and whole-grain
flours in the 1960’s, and you will also find a wide selection of cheeses made with high butterfat content. Next door,
the owners of the Good Earth Café, an old vegetarian restaurant, are still making a modest living, but the owners of
the new House of Beef across the street are millionaires.”

To say that Goof Earth Cafe restaurant's poor revenues are due to increased inclination of population towards fatty foods like cheese and red meat is a far fetched statement and is based on many assumptions. These underlying assumptions need to be evaluated before reaching on to well reasoned conclusion.
First of all the assumption that a wide selection of cheeses made with high butterfat indicates that people have increased their intake of such fatty products fails to consider that it's the variety of cheeses which has increased while the total amount of cheese sold per capita might have not increased significantly. And a store's decision to sell cheese does not really indicate that cheese consumption in general has increased. The decision could be purely based on store's expansion plan into already profitable cheese industry. This will infact prove that people were already having a high consumption of cheese.
Secondly, the failure of Good Earth Cafe to make good living from the business does not mean that people have stopped liking Vegetarian food and instead have started to prefer fatty food such as cheese, red meat. The Cafe might not be making profit because of the quality of food it serves. To evaluate the validity of this point, one needs to find if most or all of the vegetarian restaurants are seeing such a modest revenues/profits and if earlier they used to make better living in comparison to restaurants of other types.
Further, to say that House of Beef profit increase is due to reduced people's concern towards red meat and fatty cheeses is unfounded. It is important to know how this restaurant have done historically. Even if the restaurant had not done as good as now, it does not warrant that this increase is due to increased consumption of red meat among the population. Increased revenues and profits of the restaurant could be very well because of many factors such as improved quality of food, expanded offerings, or improved customer service.
Lastly, even if the consumption of red meat and fatty cheeses per capita has increased, it does not mean people are less concerned with their intake of such food. They may have in fact become more health consicious and have increased their work out time to make up for the extra calories to keep them fit. This indicates that people have started to give more importance to their health as they are spending more time on their fitness as compared to earlier generation which preferred to spend less time on thier fitness by abstaining themselves from fatty foods.
All the above mentioned points need to be evaluated before coming to final conclusion that people's increased consumption, if any, is due to the reduced concern towards intake of fatty foods such red meat or cheeses.
