Co-ordinate Geometry (re: graphing) questions are rather rare on the GMAT - you'll probably see just one (regardless of which version of the Exam you're taking). While I find it useful to 'draw' most of the graphing questions that I face, you don't need the actual picture to be hyper-accurate for you to get the correct answer (in the same way that you don't have to draw a perfect square, circle or triangle when dealing with those types of Geometry questions to correctly answer them). As such, whether you're dealing with lined, graph-style paper or not, I suspect that you could probably handle any graphing questions in the same general amount of time (+ or - a few seconds) if you try.
