Thanks for sharing your profile. Talking about your academics, your undergrad GPA is decent, and 640 GMAT is quite low. For Deferred programs, 730+ GMAT score is considered as competitive. For the deferred programs, primarily, the adcoms are concerned with the diversity of experience and learning that the candidate has accumulated at the undergraduate level. Highlight the impact you have had during your internship, leading to the organisation’s growth and development. Your Ecs are good, and you can create some impactful stories from it. To further evaluate your profile, I will need more information from you to gauge your fit for the b-schools. You may want to read the article on what business schools look in the candidate for deferred MBA programs. This article will help you understand your chances for deferred MBA programs.
