Is it to one's advantage to submit applications before the deadline? I am planning on applying R1 to a bunch of programs and think I could be done with a couple of schools in September. Obviously I will submit them to prevent myself from agonizing over every comma, but do they hold off looking at applications until the round closes?

It depends on the school. For most schools with round deadlines (vs. rolling admissions) submitting before the deadline offers no advantage as all applications are reviewed after the deadline and read in no particular order.
When interview invites and admission decisions are being released you will see that time of submission has no correlation to timing of notifications (of interviews or admission). Submit your apps early if you choose, but don't look for an additional advantage from it unless you're applying to Columbia, Cornell, or any other school with a rolling admissions process.
