I am interested in the Foster Evening program and have spoken to some people about this topic. They just started taking GRE scores last year and most students still submit GMAT scores. Because of that, there isn't a lot of information on GRE scores at Foster, as you have stated. The advice that I've heard is to compare the percentiles. If for the GMAT you'd shoot for the 90th percentile, then you should do the same for the GRE.
I was at an information session and it was said that for the GMAT all parts of the test are looked at. The GMAT numerical score is based on just quant and verbal, data for integrated reasoning and analytical writing are not advertised but those too are considered by Foster. I didn't ask about analytical writing for the GRE, but I'd imagine that that score will be considered as well.
One important thing to note is that the GRE does not have an integrated reasoning section. While speaking with the Assistant Dean he said that he wishes that the GRE had a comparable section. I'd assume that taking the GMAT and having a good IR score could separate applicants submitting GMAT scores vice GRE scores of a similar percentile.
I hope this helps. And although I will be applying to the evening program this information will still hold for the full-time program.
