Based on your various Score results - including your prior Official Score - you likely have the knowledge to earn a 600+ on the Official GMAT, but that's not the only issue to consider. There are a variety of factors that can impact your performance on a Test (both on your CATs/mocks and on the Official GMAT), including the type of Exam that you're using, the time of day that you start the Exam, the testing conditions, how well-rested you are, etc. In that same way, if you have been taking your CATs/mocks in ways that do not match-up with how you will take your next Official GMAT, then those practice results might be 'inflated.'
Before I can offer you the specific advice that you’re looking for, it would help if you could provide a bit more information on how you've been studying and your goals:
Studies:
1) What study materials have you used so far?
2) On what dates (or approximate dates) did you take EACH of your CATs/mocks and how did you score on EACH (including the Quant and Verbal Scaled Scores for EACH)?
Goals:
3) When you say that you only "need" a 600 to get into your first-choice Program, what is that assumption based on? Have you been communicating with an Admissions Officer from that School? Have you been granted a conditional acceptance as long as you score a 600 or higher?
4) What specific application deadlines are you facing?

Thanks for your input. To answer your questions:
1) The study materials that I have used are the official guides, and I have been doing the official practice questions that are offered online through Wiley. I include a mix of easy, medium, and hard questions, and usually score in the 70% in verbal and around 60% in the quant. After my first attempt almost a year ago I concluded that my weak area was verbal, so I have spent a lot of time learning the different concepts and the way of the game. I also watched all the GMATNinja SC videos on YouTube since that was my biggest weak area.

I am doing one more of the official GMAT prep tests this weekend since I am one week out from Friday.
3) The school I am looking at needs a 600 from an application to have their application considered. Apart from that the range to the program I want to attend hovers around 600-680. They value extracurricular and outside school experiences of which I have a lot. So that is one of my strong points. I would ideally need around 640 to have a good chance. I do not have a conditional acceptance.
4) The application deadline closes on January 15th of 2022. The early deadline closes on Nov 15th 2021, So I want to be able to apply before that deadline. If I am accepted during the early-app-process, I can get a verdict in December. If I am rejected in the early-app, I automatically get put in the "normal" pool of applications that applied after Nov 15th.
As you can see the range of my CAT scores varies a lot, which to me is a bit worrying since I sometimes clear the 600 hurdle, and sometimes I don't.
