How big of a deal is it if during college I just did classes and worked, with zero extracurricular participation? Does it help if I worked as an intern 10-25 hours/week at the company I work at now? Should I plug the fact that I went from lowly intern to a major leadership position in just a few years, and maybe tie that in to my determination as an intern in college in lieu of extracurricular activity? Is this "optional" essay material or should I stay silent on this gap in my profile? Thanks!

If your weak college extracurriculars were because you were self-funding your education and needed to work then the schools would cut you slack. They cut you less slack, though still some, if your extracurricular was an internship that you were really passionate about. If you have accumulated a strong extracurricular/community profile since graduating then that would also compensate. Though I do recommend you discuss the internship in your essays I don't recommend you discuss it as an excuse for weak extracurriculars (unless, again, the internship was necessary to pay for your college). They will see your college extracurriculars in the data section of your application, so no need to draw extra attention to it.
