There are a variety of factors that could influence how well you score on a practice CAT, including (but not limited to) the 'brand' of CAT, whether you take the FULL CAT or skip sections, the time of day that you take the CAT, how well-rested you were before you took it, the environment you take the Test in, etc.
From the timeline that you've described, you've taken 3 CATs over the course of about 3 weeks. Your Quant Scaled Scores are remarkably similar, which means that you're doing certain things consistently well, but you're making certain consistent mistakes. The 'swing' in your Verbal scores in such a short period of time is tougher to assess. The Official GMAC CATs are the most realistic ones available, so maybe that V41 is a measure of how well you might perform on the Official GMAT. However, you might have just gotten a bit 'lucky' when you took that CAT and it's the other two scores that are a more realistic measure of your current skills.
Regardless of which score is "more" accurate, you can still make some big improvements to your scores in the time that you have. Before I can offer you any advice on how to adjust your studies, it would help if you could provide a bit more information on how you've been studying and your goals:
