I registered in the MGMAT self-study program and I am just wondering if all the material ( MGMAT books and OG questions) I got would be sufficient enough for me to get 700+ score?
This is quite difficult to definitively answer with a simple yes or no, as your test performance depends on a number of factors. You certainly have reliable study materials. It's up to you, however, to combine these books with a positive attitude and consistent effort. If you do your best, then it's certainly possible to achieve your goals.

And, just out of curiosity, did you take a diagnostic test yet? This would help us all to have a better idea of your chances to reach a 700.

I started studying with MGMAT Guided Self Study about a week ago and noticed that I can only finish the items in "Do This!" section and have no time left for additional Easier Quant/Verbal and Harder Quant/Verbal questions in a weekly period. Since I will take GMAT in the begining of January, when I finish 9-week program I will have 6 more weeks to the test.
I'm not very familiar with Manhattan's Self Study program, so it's a tad difficult to respond. But I'm willing to give it a shot. First, let's address these two questions:

(1) How many questions are we talking about?

(2) Why can't you finish the extra questions?

The only other issue that I can think of at the moment is that you just started, so it's probably not too surprising that the first week or so are difficult. You might be able to adjust as time goes on. It's good to see, though, that you're being proactive about this.

Do you think it is a good idea to finish the program without doing additional Easier Quant/Verbal and Harder Quant/Verbal questions and to focus on them for a 2 week period?
This could be an option, but you probably don't want to cram too much activities right before the exam. Doing so could cause burnout, which would adversely affect your test score.
