How can D be right when Black Puerh Tea is a type of black tea?

Unlike green or oolong tea, black puerh tea undergoes an oxidation process with the help of naturally occurring enzymes or, in the world of tea, is said to be “fermented.” It then undergoes an additional step that differentiates it from other black teas: after oxidation, the leaves are aged in humid conditions, sometimes for several decades.

Step 4, you can argue the same about answer choice E, can't you? Or the phrase "may protect" indicates that E is incorrect?

Let us focus on these lines from the passage "Like all other teas, puerh contains antioxidants, which may help protect regular consumers from some cancers. It also contains caffeine, though not as much as most other black teas." See the underlined, it cannot be inferred that caffeine is preventing cancer.

From the previous line, yes, we can say that 'antioxidants' may help protect against cancer. However, we cannot apply the same for caffeine. This is why option E cannot be inferred.
