Honestly, this is exactly how I'd play it. You want to emphasize your interest in the program (don't underestimate the value of this!), share any recent good news in your career, and show anything else that you've done to practively strengthen your application (in this case, the class that you took).
MYy advice is to NOT dwell on your weaknesses too much. Like you suggested, they've heard it all before. Focus on the positives and the recent.forward-looking stuff, like you already have done. I also don't think that taking the GMAT again will help much. Think about it... If you got a 700, would that really change their minds (assuming that they waitlisted you because they doubt your intellect)? A 720? A 750? What is that theoretical tipping point? Who knows...
I understand that it's maddening to not really know, but I think you're doing the right thing!
