Work Exp: 7 years at a large, global investment bank - two in risk management and five in energy trading, currently hold VP title
Education: 3.6 GPA at an Ivy League School
Extracurricular: Nothing outstanding. I am an alumni mentor for students at my undergraduate university for career issues and I mentor new analysts and associates at work. I am also an avid road cyclist.
Motivation for MBA: To switch markets, from energy option to something more financial related, specifically interest rate derivatives. I'd like to leverage the skills from a heavily financially oriented MBA program to eventually run a trading desk at a large investment bank.

Your stats are pretty good as well as your work experience of course. The biggest issue for you would be to explain why you waited so long, and how passionate are you about the MBA? Coming from the financial services industry I see your thought on the process, but to a non finance person, your reason for MBA won't seem as convincing, that you need an MBA to switch from one job to another within finance. It seems like you may be able to do that switch without the MBA, so you would need to have more to your story.
Are you applying now in round 2? Where are you in your process, given the deadlines are approaching?

Your statistics and profile are certainly in range for both programs. You should think about a specific part of each business school (at either Wharton or Columbia) and write about why these programs interest you. Business schools such as Wharton, Columbia, and NYU often have students who apply to many similar MBA programs, so it is important to explain why you want to attend that particular program. It would be a good idea to reach out to current students, alumni, and professors. You could even discuss certain classes (perhaps ones that are related to interest rate derivatives).
