Schools will consider your number of years work experience all the way to matriculation, however you obviously only be able to comment on your work experience up until application. There is the option to update the adcoms after you submit your application, however if there are material changes in your profile, so for example, if you get a promotion this fall, you can let them know to update your profile. Your school list looks reasonable, but if you can get your GMAT above 700, you could unlock more schools in the top 10. Some of this depends on your post MBA vision too. I-banking is a pretty high-octane feeder industry and traditionally, has sent young analysts back to school after only two years on the job, so history is on your side and the extra hours you likely have had to put in doing i-banking means there is more "mileage" under your belt beyond what would be typical for two years of "regular" work.
