Hey clint845 - What you've described is certainly enough to apply to all the top schools. Many adcoms prefer the GMAT however, and an 80% on the GRE is not always seen as comparable to an 80% on the GMAT, which is often considered to be a standard to aim for at the best schools. But you're totally in range with the current test result. The symbolic logic isn't the same as a hardcore quant class like calculus or stats (some liberal arts types opt for symbolic logic to meet a math requirement exactly for that reason!!). The two econ classes are sufficient though, and if you got a B or better in them, you're fine. If your grades in those courses were C or worse then it's going to be trickier.
Many schools offer pre-matriculation refreshers and so if they feel you'd benefit from that then they'll steer you in that direction once you're accepted. Sometimes calculus is specifically required before beginning school. It wouldn't hurt to roll up your sleeves and take that now, as a way too boost your profile in advance, but it's not necessary. What you've described is sufficient to show you are qualified for admission; what they school deems necessary for you before you begin would be a different story. We're not seeing any showstoppers here, and we definitely do not see that an optional essay is warranted in this case.
It's sort of difficult to say without knowing the entire profile though - we can't be definitive. But that's our assessment based on what you've sketched out here. You should be fine.
