So I would say H/S/W is a stretch but if you apply to a nice set of schools under those as well, you would hedge yourself well.

What about Booth and other Ivy's, and LBS / Insead?

Congrats on a great GMAT score, at this point I would not retake. You have a very high score and the schools should be comfortable with your aptitude at this point. On the age front with 7 years of experience you should be fine for most of the schools you are targeting. With every candidate but even more so for the slightly more experienced candidate your rationale for pursuing a graduate education in business has to be spot on and make sense given your prior experience. So spend some time connecting the dots for admissions and having a clear story here and you should be in good shape!
